Caprese Crostini

Ingredients for 2 servings:

  • 4 slices of brown bread (rye bread)
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 2 tomatoes
  • 1 ball of mozzarella
  • salt and pepper
  • possibly basil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Toast the bread on high until dark and crispy (rustic white bread works too, of course). Rub half a garlic clove into it while it’s still warm and drizzle with a few drops of olive oil. Thinly slice the tomatoes and mozzarella. Top the bread with the tomato slices and season with salt. Then add the mozzarella and pepper. Garnish with basil leaves, if desired. Perfect as a snack or for a social gathering, and incredibly easy to make.
