Ingredients for 6 servings:
- 4 eggs, hard-boiled and finely chopped
- 2 cans of white beans (approx. 250g drained weight each)
- 100 g red pickled peppers from the jar
- 1 onion(s)
- 4 tbsp oil (e.g. sunflower oil)
- 6 tbsp vinegar (herb vinegar)
- 2 tbsp mustard, hot
- ½ tsp thyme, dried
- possibly chives

inexpensive salad for the winter months
Finely chop the peppers and onions. Make a salad dressing from the oil, vinegar, mustard, and thyme. Mix the peppers, onions, and beans with the dressing and let it simmer briefly. Finally, add the finely chopped eggs and stir briefly again. If desired, garnish the salad with chives. Tip: Slice the eggs thinly with an egg slicer, then cut the slices into strips. The yolks may break up.
