Ingredients
 

  • 160 g Butter
  • 75 g Sugar
  • 100 ml Milk
  • 3 tbsp Whipped cream
  • 500 g Mascarpone
  • 2 sheet Gelatin
  • 100 g Cream
  • 100 g Sugar
  • 2 Vanilla pods
  • 300 g Wild berries
  • 5 Mint leaves

Instructions
 

  • For the caramel, melt the butter and sugar in a saucepan and let them caramelize until golden brown while stirring constantly. Pour in the milk while stirring vigorously and bring everything to the boil. Keep stirring until the caramel crystals have dissolved and then mix everything in the blender - then chill.
  • Dissolve the gelatine in cold water. Then put in a saucepan and heat with part of the mascarpone, stirring constantly. When the mascarpone starts to stiffen, add the rest of the mascarpone. Then add the cream, sugar and vanilla.
  • Then chill the whole thing for at least 3 hours. Decorate the plates with a little caramel sauce. With 2 spoons dipped in hot water, cut out the mascarpone and place on the caramel sauce. Finally, decorate everything with fruits and a leaf of mint.
