Caramelized fennel

Ingredients for 4 servings:

  • 2 fennel, cleaned and quartered
  • 1 tbsp powdered sugar
  • 100 ml sparkling wine or Prosecco
  • 1 tbsp spice mix (Exotic Oriental Spice)
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Great as a side dish for anything stir-fried or cold for a buffet

Sprinkle the powdered sugar in a pan and heat the pan. When the powdered sugar begins to melt, toss the fennel quarters in it and fry them well (they should take on a good brown color). Then add salt and briefly fry the spice mixture until it begins to smell. Deglaze with the sparkling wine and cook the fennel until tender, about 5 minutes. Finally, season with pepper to taste. Serve immediately as a side dish. If serving at a buffet, it can also be served chilled.
