Cheesy beans with fried potatoes

Ingredients for 4 servings:

  • 750 g jacket potatoes, very small
  • 5 tbsp oil
  • Salt
  • 2 onions
  • 1 gr. can/n beans, or 500 g fresh beans
  • 2 tbsp margarine
  • 200 g cheese (Emmental or Gouda), grated
  • 1 bunch of parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel the potatoes. Heat oil in a large pan. Add the potatoes, season with salt, and fry. Peel and chop the onions. Open the can of beans and drain. Cook the fresh beans and drain. Heat the margarine in a saucepan. Cook the onion until golden brown, then add the beans and season with salt. Fold in the grated cheese and heat gently in a covered pan. Wash the parsley, pat dry, chop, and add to the beans. Serve the beans and potatoes separately.
