Caramelized Orange Fillets with Homemade Vanilla Ice Cream

Ingredients
 

vanilla icecream

  • 500 ml Cream
  • 200 ml Whole milk
  • 1 pinch Salt
  • 2 Vanilla pods
  • 1 Egg
  • 1 Egg yolk
  • 3 tbsp Sugar

Orange fillets

  • 3 Oranges
  • 3 tbsp Sugar
  • 4 cl Orange liqueur

Instructions
 

  • Heat 1,300 ml cream and milk and bring to the boil briefly. Add salt and vanilla pod pulp and, in a bowl, beat the whole egg and egg yolk with 3 heaped tablespoons of sugar until frothy. Gradually stir in the heated milk-cream mixture in small stages, chill overnight and process in the ice cream machine the next day - chill.
  • Peel the oranges with a sharp knife and remove the orange fillets. Squeeze the rest of the orange for the juice. Heat 3 heaped tablespoons of sugar in a saucepan until it turns brown. Add the orange fillets, deglaze with orange liqueur and add some fresh orange juice.
  • Arrange the orange fillets in a star shape on large plates and drape 1-2 scoops of vanilla ice cream in the middle. Add 200 ml of whipped cream from the piping bag.
