Ingredients for 4 servings:

  • 1 large onion(s)
  • 2 cloves garlic
  • 1 piece(s) ginger, 2 cm
  • 2 stalk(s) leeks
  • 1 tbsp oil
  • 1 tbsp chili paste
  • 1 tbsp curry powder
  • 100 ml coconut milk (can)
  • 300 ml vegetable stock
  • 1 lemon(s)
  • 500 g fish fillet(s) (cod fillet)
  • Salt
  • 300 g rice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with curry and coconut milk

Roughly dice the onion, finely dice the garlic and ginger, and slice the leek into rings. Heat the oil in a non-stick pan. Sauté the onion, garlic, and ginger. Add the leek rings. Deglaze with the stock and coconut milk, season with curry and chili paste, and simmer for about 5 minutes. Drizzle the cod fillet with lemon juice. Season the fish with salt and add it to the sauce, then cover and let it simmer for about 5 minutes. Prepare the rice according to the package instructions.
