Baked redfish fillet

Ingredients for 4 servings:

  • 250 g rice (8-minute rice)
  • 30 g butter
  • 30 g flour
  • 3 tbsp mustard
  • 250 ml broth
  • 250 ml cream
  • 2 tsp lemon juice
  • 1 tsp sugar
  • 500 g redfish fillet(s)
  • 1 bunch of dill
  • 3 egg yolks
  • salt and pepper
  • Fat, for the shape

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

QUICK RECIPE

Place rice in boiling salted water, cover, and simmer over low heat for 8 minutes. Melt butter or margarine. Sauté flour and mustard in it. Add stock and cream, season with salt, pepper, and sugar. Let it simmer for a few minutes. Whisk egg yolk and fold into the cream; do not let it boil any longer! Preheat oven to 250°C (225°C). Place drained rice in a greased baking dish. Season fish fillets with salt, pepper, and lemon juice, and place on top of the rice. Pour sauce over the fish. Bake the fish on the second rack from the top for 8 minutes and sprinkle with chopped dill.
