Carpaccio di Manzo – Beef carpaccio with fresh asparagus

Ingredients for 1 servings:

  • 2 stalk(s) white asparagus (not too thin)
  • 30 g beef fillet(s), raw
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • salt and pepper
  • Chive rolls

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel the asparagus and blanch for about 10-15 minutes. Cut the beef fillet into thin slices and roll out thinly between cling film using a rolling pin. Arrange on a plate. Mix the lemon juice, olive oil, salt, and pepper and drizzle over the asparagus and beef fillet. Sprinkle with chives.
