Carrot and apple salad with yogurt and chive dressing

Ingredients for 4 servings:

  • 1 kg carrot(s)
  • 2 apples
  • 1 onion(s)
  • 1 dash of lemon juice or juice of half a lemon
  • 300 g natural yogurt, 3.8%
  • 1 shot of rapeseed oil
  • 1 shot of spirit vinegar
  • 1 pinch(s) salt and pepper, black
  • 1 handful of chives

Working time approx. 45 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 45 minutes

Grate the carrots and apples. Chop the onion. Then place everything in a bowl. Squeeze over the lemon juice to prevent the apples from browning. Add the yogurt (if you’re lactose intolerant, simply use lactose-free yogurt), rapeseed oil, vinegar, salt, and pepper, and mix well. Finally, sprinkle over the chives and mix. Let the salad sit in the refrigerator for about 2 hours. Tip: If the apples aren’t that sweet, feel free to add 1 tablespoon of agave syrup or sugar. However, I always make the salad as described above without sugar.
