Carrot and parsley root pan

Ingredients for 4 servings:

  • 1 bunch of carrots
  • 1 bunch parsley root(s)
  • 3 tbsp olive oil
  • 2 tbsp spice mix (wild thyme or salad herbs)
  • some salt
  • 1 slice(s) of feta cheese

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Thinly slice the carrots and parsley roots. Heat the oil in a pan, add the carrots and parsley roots, and toss to coat. Cover and cook for 20 minutes, until the vegetables are tender. Add the spice mix and salt, tossing the vegetables to coat evenly. Cook, covered, for another 5 minutes. Dice the feta cheese and add it to the vegetables. Cover and cook for another 2-5 minutes, depending on how tender you like the cheese. Serve with potatoes. It also tastes delicious cold.
