Carrot and potato soup

Ingredients for 4 servings:

  • 500 g carrot(s)
  • 1 pack of mashed potatoes
  • 2 tbsp broth
  • 1 tsp curry powder
  • 150 g crème fraîche
  • 5 tbsp orange juice
  • 1,500 ml water
  • Salt
  • Pepper, white
  • 4 sausages

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash, peel, and slice the carrots. Lightly sauté in a little oil. Add water and bring to a boil. When the water is boiling, add the stock and simmer for at least 10 minutes to allow the carrots to soften. Then, using a masher, mash the carrots to the desired consistency. Carefully stir in the mashed potato powder, letting it cook well. Half a sachet is enough for me; if you want it a little thicker, just add more mashed potato. Season with a little (!!!) salt and white pepper. Add the curry powder and orange juice, and finally stir in the crème fraîche. Keep warm; do not boil. Add the sausages, let them warm through, and then serve.
