Carrot and potato stew

Ingredients for 4 servings:

  • 1 kg carrot(s)
  • 1 kg potatoes
  • 1 bunch of soup greens or dried soup greens
  • 2 liters of water
  • Vegetable stock cubes or granulated stock
  • 4 sausages (Mettenden)
  • Spice(s) as needed and to taste
  • e.g. smoked pork or bacon, depending on your preference and taste

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the carrots and potatoes, and place them in a pot. Fill with water. Add the soup vegetables. Add stock to taste. Bring to a boil, then simmer until the carrots and potatoes are tender. Then mash with a masher until the desired consistency is reached. Slice the Mettenden sausages, add them, and heat through. Season to taste and serve. If you like, you can also add smoked pork or bacon to the boiling vegetables. You can also replace the Mettenden sausages with bacon. Using only smoked pork, the stew is very low in calories and fat. If you’re careful with the seasoning, it’s also an ideal dish for small children.
