Carrot and tuna salad

Ingredients for 1 servings:

  • 2 carrots
  • 1 cup cottage cheese
  • 1 can tuna, in its own juice
  • ¼ cucumber(s)
  • 2 tbsp balsamic vinegar
  • salt and pepper
  • Herbs

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

light snack or office lunch

Peel and grate the carrots. Add the cottage cheese. Drain the tuna and toss it with the carrots and cottage cheese. Peel the cucumber and either grate it or cut it into small pieces, then mix in. Season with salt, pepper, balsamic vinegar, and herbs (I use frozen) and let it marinate in the refrigerator for a while. I like to take this salad to the office because it’s so easy to prepare.
