Ingredients for 14 servings:
- 250 g carrot(s), grated
- 50 g flour (wholemeal flour)
- 2 tsp baking powder
- 50 g almond(s), grated
- 100 g hazelnuts, grated
- 50 g breadcrumbs
- 3 eggs, separated
- 100 g sugar
- 1 pinch of salt
- Cinnamon
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
(not just for diabetics)
Combine flour, baking powder, almonds, nuts, salt, and breadcrumbs. Whisk egg yolks, cinnamon, and sugar until fluffy, then fold in the flour-nut mixture and grated carrots. Whisk until stiff peaks form and fold in. Bake in a preheated oven at approximately 180°C for approximately 45 minutes. Cut into 14 equal pieces. 1 piece = 1 loaf.
