Carrot Caponata

Ingredients for 4 servings:

  • 1 onion(s), red
  • 1 garlic clove(s)
  • 1 chili pepper(s), fresh red
  • olive oil
  • 1 kg carrot(s), very small young
  • 25 g pine nuts
  • 25 g raisins
  • Sea salt
  • 1 tbsp honey, liquid
  • 2 tbsp red wine vinegar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 15 minutes

Peel the onion and garlic, then roughly chop them. Halve and deseed the chili. Heat about 3 tablespoons of olive oil in a pan, then add the onion, garlic, and half a chili and sauté over medium heat, stirring occasionally. Then add the trimmed carrots along with the pine nuts, raisins, and a pinch of sea salt. Cook over low heat for about an hour, stirring occasionally. Now add the honey and vinegar to the pan, stir, and sauté for another 5 minutes. 50 kcal per serving.
