Ingredients for 8 servings:
- 100 g shallot(s) or onions
- 750 g carrot(s)
- 40 g butter
- ½ liter of milk
- ½ liter orange juice
- ½ liter vegetable broth
- salt and pepper
- possibly whipped cream
- possibly chervil
- possibly pumpkin seeds

the simplest and tastiest carrot soup
Peel and dice the shallots, and sauté them in butter until light yellow. Add the carrots and milk and simmer with the lid on for about 20 minutes. Then puree. Then add the orange juice and vegetable stock. Season with salt and pepper, bring back to a boil briefly, and season again to taste. Tip: Garnish with whipped cream, chervil, or pumpkin seeds before serving. This recipe is enough for an appetizer for about 8 people.
