Ingredients for 4 servings:
- 1 cup orange juice, freshly squeezed
- 5 cup(s) carrot(s), thinly sliced
- Water
- 1 tsp salt
- 4 tbsp Clarified butter or ghee
- 1 banana(s), ripe
- 3 tbsp raisins
- 1 tsp cardamom
- ½ tsp turmeric
- ½ tsp mustard seeds
- 4 carnations
- 1 tbsp cumin
- ¼ tsp cayenne pepper
- possibly cornstarch
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Place the carrots in a pot with orange juice and salt and fill with water until the carrots are just covered. Boil gently for 5 minutes. Briefly roast the spices in ghee, then add the carrots with the liquid, the raisins, and the thinly sliced banana. Simmer everything for about 30 minutes, thickening with cornstarch dissolved in water if desired.
