Ingredients
 

  • 4 Eggs
  • 200 g Sugar
  • 200 g Flour
  • 250 g Crushed nut's
  • 1 packet Gingerbread spice, approx. 15 g
  • 125 g Finely grated carrots
  • 60 g Orange peel
  • 60 g Citronat (Succade)
  • 24 Wafers, 7 cm in diameter

Instructions
 

  • Beat eggs and sugar until frothy. Finely chop the orange peel and lemon peel and add to the egg mixture with the remaining ingredients. Mix everything together and then spread approx. 1 tablespoon of batter onto a wafer.
  • Bake in a preheated oven at 180 degrees for 25 minutes. Let it cool down and then brush it with any icing. z. B. with melted chocolate or icing sugar.
  • For a "healthier" option, use 100 g honey instead of sugar, 2 tbsp ground flaxseed and cocoa nibs if you like. Increase the amount of carrots to 150 g.
