Carrot Green Pesto
The perfect carrot green pesto recipe with a picture and simple step-by-step instructions.
- Carrot greens from 1/2 bunch of carrots
- 2-3 sprigs of parsley and dill each
- 1 large handful Spinach
- 20 g Pine nuts
- 1 Clove of garlic
- 1 El Lemon juice
- 1 Tl Lemon peel zest
- 0,5 Tl Salt
- 4 El Olive oil
- Pasta of your choice for 2 people
- Cook the pasta as usual.
- Remove the large stalks from the carrot greens (peel off the tender ones with your fingers). Also remove the stems from the dill and parsley.
- Finely puree the carrot greens together with the garlic, lemon juice, dill, parsley, spinach and olive oil.
- Toast the pine nuts in a pan without fat.
- Mix the pesto with the drained pasta and the pine nuts.
