Carrot Green Pesto

The perfect carrot green pesto recipe with a picture and simple step-by-step instructions.

  • Carrot greens from 1/2 bunch of carrots
  • 2-3 sprigs of parsley and dill each
  • 1 large handful Spinach
  • 20 g Pine nuts
  • 1 Clove of garlic
  • 1 El Lemon juice
  • 1 Tl Lemon peel zest
  • 0,5 Tl Salt
  • 4 El Olive oil
  • Pasta of your choice for 2 people
  1. Cook the pasta as usual.
  2. Remove the large stalks from the carrot greens (peel off the tender ones with your fingers). Also remove the stems from the dill and parsley.
  3. Finely puree the carrot greens together with the garlic, lemon juice, dill, parsley, spinach and olive oil.
  4. Toast the pine nuts in a pan without fat.
  5. Mix the pesto with the drained pasta and the pine nuts.
