Ingredients
 

  • Carrot greens from 1/2 bunch of carrots
  • 2-3 sprigs of parsley and dill each
  • 1 large handful Spinach
  • 20 g Pine nuts
  • 1 Clove of garlic
  • 1 El Lemon juice
  • 1 Tl Lemon peel zest
  • 0,5 Tl Salt
  • 4 El Olive oil
  • Pasta of your choice for 2 people

Instructions
 

  • Cook the pasta as usual.
  • Remove the large stalks from the carrot greens (peel off the tender ones with your fingers). Also remove the stems from the dill and parsley.
  • Finely puree the carrot greens together with the garlic, lemon juice, dill, parsley, spinach and olive oil.
  • Toast the pine nuts in a pan without fat.
  • Mix the pesto with the drained pasta and the pine nuts.
