Carrot-orange-ginger soup à la Gabi

Ingredients for 4 servings:

  • 400 ml water
  • 800 g carrot(s), peeled, chopped
  • 1 piece(s) ginger, walnut-sized, fresh, peeled, finely diced
  • 2 oranges, juice
  • 80 g butter
  • 2 tsp, grated Madras curry powder
  • Sea salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Bring water to a boil, add carrots, and cook covered over medium heat for about 20 minutes until soft. Add ginger and orange juice, blend very finely with a hand blender, add butter, curry, and salt, and blend vigorously again until creamy.
