Ingredients for 2 servings:
- 2 tbsp extra virgin olive oil
- 500 g carrot(s)
- 2 tbsp goat’s cheese
- 1 tbsp tahini
- pepper
- basil

Heat the olive oil in a large, nonstick pan. Wash the carrots and use a vegetable peeler to cut them into thin strips, similar to tagliatelle, and add them to the pan. Fry over medium heat for about 10 minutes. Serve the finished carrot noodles on plates. Garnish with goat’s cheese, tahini, pepper, and basil.
