Ingredients for 4 servings:

  • 700 g carrot(s)
  • 1 large apple (e.g. Braeburn)
  • 2 tsp salt
  • ¼ tsp black pepper, freshly ground
  • 4 tsp sugar
  • 4 tbsp lemon juice
  • 3 tbsp vinegar (herb vinegar)
  • 4 tbsp balsamic vinegar, lighter
  • 7 tbsp oil (Alba oil)*

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Peel the carrots and apple and grate them (not too finely). Whisk together the dressing ingredients and toss with the grated carrots and apples. Let stand for about 30 minutes. *Alba oil is a Swedish rapeseed oil with a buttery flavor and gives this salad a special touch! However, you can of course use other oils if you prefer.
