Carrot salad Arabic style à la Gabi

Ingredients for 4 servings:

  • 4 apples, unpeeled, pitted, finely grated
  • 2 tbsp walnut oil
  • 1 tsp mustard, medium hot
  • 1 tbsp lemon juice
  • 200 ml apple juice
  • 8 figs, dried, cut into small pieces
  • 6 m.-large carrot(s), peeled, coarsely grated
  • 1 bunch mint, leaves picked, finely chopped
  • ¼ tsp Madras curry powder
  • Salt and pepper, white from the mill
  • 2 tbsp sesame seeds, roasted without fat

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Mix together the apples, walnut oil, mustard, and lemon juice. Heat the apple juice in a saucepan, add the figs and carrots, bring to a boil, add the mint leaves to the apples, season with curry, salt, and pepper, and serve warm, sprinkled with sesame seeds.
