Carrot sauce with pasta

Ingredients for 3 servings:

  • 500 g carrot(s)
  • 1 can of tomatoes
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 cup whipped cream
  • salt and pepper
  • 1 small piece(s) of butter
  • some basil leaves

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel and slice the carrots. Dice the onion and garlic. Brown everything in a pan with butter. Then add the tomatoes. Simmer in a covered pan for 10 to 15 minutes, stirring occasionally. Remove the pan from the heat and blend everything thoroughly. Add the cup of cream, season with salt and pepper to taste, and bring back to a boil briefly. We always serve this delicious sauce with spaghetti and lots of Parmesan cheese. A few fresh basil leaves go great with it. They also make a lovely garnish.
