Carrot spaghetti

Ingredients for 4 servings:

  • 400g spaghetti
  • salt water
  • 4 carrots
  • 2 tbsp margarine
  • 1 onion(s)
  • 1 tsp curry
  • ½ cup cream
  • ½ cup sour cream
  • 2 tbsp soy sauce or Maggi
  • e.g. milk
  • salt and pepper
  • some water, maybe
  • chervil

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Carrot noodles, vegetarian

Cook the spaghetti in salted water as usual. Peel and finely chop the onion. Peel the carrots and cut into long strips, or halve them lengthwise and slice them thinly. Heat the margarine in a pan and sauté the onion. Then add the carrots and a splash of water, if desired, put the lid on the pan, and sauté the carrots. Just before the carrots are tender, sprinkle everything with the curry powder, pour in the cream and sour cream. Season generously with soy sauce (Maggi also works), chervil, salt, and pepper. Pour the sauce over the drained spaghetti. If the sauce isn’t enough for you, you can simply dilute it with milk or, of course, with cream and sour cream and the spices.
