Cashew and barberry cookies

Ingredients for 1 servings:

  • 100 g butter or 80 g oil
  • 50 g brown cane sugar
  • some tonka bean shavings
  • 1 egg(s)
  • 80 g cashew nuts, chopped
  • 80 g barberries
  • 100 g wholemeal spelt flour
  • 1 tsp baking powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cream the butter, sugar, tonka bean zest, and egg until fluffy. Mix the remaining ingredients and stir in. Using a teaspoon, place small heaps onto a baking sheet lined with baking paper and bake for about 20 minutes at 175°C (preheated oven).
