Cashew chicken with celery

Ingredients for 2 servings:

  • 400 g chicken strips
  • 1 cup cashew nuts
  • 4 stalks celery
  • 3 cloves garlic
  • 1 small piece(s) of ginger
  • 1 tsp salt
  • 2 tbsp oil
  • 3 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 pinch of salt

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 23 minutes

Wash the meat thoroughly and place it in a bowl. Mix all the marinade ingredients with the meat in the bowl. Let it rest for at least 5 minutes. Meanwhile, wash the celery stalks thoroughly, remove the strings, and slice the stalks diagonally. Peel the ginger and slice thickly. Peel the garlic and finely chop. Heat the oil in a wok, add the cashews, and roast until golden brown. Remove the nuts. Heat the remaining oil in the wok over high heat, add the ginger, and fry for 20 seconds. Add the meat and fry vigorously. After 30 seconds, add the garlic and continue frying. After 1 minute, add the celery and 1 teaspoon of salt, mix well, and continue frying for 1.5 minutes, until the meat is cooked. Sprinkle the cashews over the top.
