Cashew nut muffins

Ingredients for 12 servings:

  • 100 g cashew nuts, chopped
  • 250 g flour
  • 1 m.-sized orange(s), untreated, including the grated peel and the fillets for decoration
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 large egg(s)
  • 125 g sugar
  • 80 ml vegetable oil
  • 150 g sour cream
  • 150 ml orange juice, fresh
  • 50 g quark
  • 3 tbsp orange juice, fresh

Instructions

Working time approx. 20 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Preheat the oven to 180°C. Grease a muffin tin or line it with paper baking cups. Combine the flour with the orange zest, baking powder, baking soda, and chopped cashews. Beat the egg and sugar until frothy. Stir in the oil, sour cream, and orange juice. Sift the flour mixture over the muffin tin and fold it in. Divide the batter among the muffin tins and bake on the middle rack for 20-25 minutes. Remove from the oven and let rest for 5 minutes. Meanwhile, combine the quark and orange juice. Decorate each cooled muffin with a dollop of quark and an orange segment.
