Tomato-Apricot Relish

Ingredients for 6 servings:

  • 6 cherry tomatoes
  • 2 tomatoes, dried
  • 2 m.-large apricot(s)
  • 1 small carrot(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 12 minutes

Purée the tomatoes, sun-dried tomatoes, and carrot with a hand blender. Dice the apricots, add them to a hot pan, and sauté for about 2 minutes. Add the apricots to the tomato and carrot purée. Serve as a relish for hamburgers or simply as a spread on bread.
