Ingredients for 1 servings:

  • 130 g cashew nuts
  • 300 ml water
  • 2 tbsp red wine vinegar, vegan
  • ½ tsp salt
  • 1 small onion(s), chopped, if desired
  • e.g. herbs, fresh or frozen

Soak the cashews in 300 ml of water overnight (or for at least 1-2 hours). Drain the nuts, reserving 50 ml of the water. Add it to a blender (or an immersion blender) along with the remaining ingredients and blend until smooth. Then refrigerate for 2-3 hours to thicken the mixture. Add herbs (frozen or fresh) if desired. This dip goes perfectly with baked potatoes, crackers, grilled food, or as a cream cheese alternative on a slice of bread.
