- 4 large potatoes
- 6 eggs
- 50 ml low-fat milk
- 2 m.-sized onion(s)
- 150 g salami, in one piece
- Paprika powder, sweet
- salt and pepper
- Parsley

My favorite recipe for almost 30 years
Cut the raw potatoes into 1 cm cubes and pat dry with a kitchen towel. Then fry them in the pan until crispy on all sides. Finely chop the onions and add half. Sprinkle with a little salt and paprika. Now mix the eggs with a little milk in a bowl. Stir in half a teaspoon of paprika, a good pinch of salt, some black pepper, and the other half of the onions. Pour the mixture over the potatoes in the pan. Cut the salami into small pieces and sprinkle them on top of the still-soft egg dish. Cover the pan and cook on low heat for about 30-40 minutes. Then garnish with some finely chopped parsley and serve.
