Gröstl with minced meat

Ingredients for 4 servings:

  • 800 g potatoes, cooked
  • 500 g minced meat, mixed
  • 150 g smoked bacon, diced
  • 1 large onion(s), diced
  • Salt
  • pepper
  • 1 tsp, heaped marjoram, shredded
  • Clarified butter
  • 4 eggs
  • 1 bunch of chives

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Variation of the classic “Tiroler Gröstl”

Sauté the finely diced onion in lard in a pan until translucent, add the diced bacon and fry. Transfer both to a bowl and set aside. Fry the minced meat in the same pan until fully cooked. Season with salt and pepper and add to the bacon and onions. Peel the potatoes, slice them, and fry in the same pan in clarified butter until golden brown. Season with salt and marjoram, then add the bacon, onions, and minced meat and mix everything together. Season again with salt and pepper if desired. Serve on 4 warmed plates. Fry 4 fried eggs in another pan and place one on each of the prepared Gröstl. Sprinkle with finely chopped chives and serve.
