Caught fish in baking paper

Ingredients for 2 servings:

  • 4 m.-sized fish fillet(s) (cod, redfish, etc.)
  • 6 small tomatoes
  • 250 g mild sheep’s cheese
  • 50 ml olive oil
  • 2 tbsp thyme, dried
  • salt and pepper
  • Garlic

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

First, prepare two pieces of baking paper (approximately the size of a baking sheet). Place two fish fillets next to each other in the center of each piece of baking paper and season generously with salt and pepper. Cut the tomatoes into eighths and place them on top of the fish. Dice the feta cheese and add them as well. Chop the garlic and sprinkle over the fish. Drizzle the oil evenly over the fish and sprinkle with a tablespoon of thyme. Fold the parcels, seal tightly, and staple if necessary. Place on a baking sheet and bake at 200°C (400°F) top/bottom heat for about 30 minutes. Rice is best served with this dish.
