Ingredients for 4 servings:
- ½ head of cauliflower
- ½ head of broccoli
- 1 onion(s)
- 1 carrot(s)
- 1 potato(s), floury
- some chili powder
- 1 liter vegetable broth
- salt and pepper
- nutmeg
- 1 tbsp parsley, finely chopped
- 2 tbsp crème fraîche
- Croutons
- butter
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cauliflower and Broccoli Soup
Clean and roughly chop the cauliflower, broccoli, onion, carrot, and potato. Place everything in a saucepan and pour in the broth. Bring to a boil and season with salt, pepper, chili, and nutmeg. Reduce heat to low until the vegetables are soft. Blend until smooth, then add the crème fraîche and parsley. Season to taste before serving and serve with croutons toasted in a little butter.
