Ingredients for 8 servings:
- 175 g flour
- 1 pinch of salt
- ½ tsp paprika powder
- 1 tsp thyme, dried
- 75 g margarine
- 3 tbsp water
- 100 g cauliflower, in florets
- 100 g broccoli, in florets
- 1 onion(s), quartered
- 30 g butter or margarine
- 1 tbsp flour
- 6 tbsp vegetable broth
- 125 ml milk
- 75 g Cheddar cheese, grated
- salt and pepper
- Paprika powder, for sprinkling
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Sift flour and salt into a bowl. Knead in the paprika, thyme, and margarine. Add the water and knead everything into a dough. Roll out the dough and line a non-stick baking pan (18 cm diameter). Prick the base with a fork and line with baking paper. Top with baking beans and bake in an oven preheated to 190°C for 15 minutes. Remove the baking paper and beans and bake the dough base for a further 5 minutes. Cook the cauliflower, broccoli, and onion in a pot of lightly salted, boiling water for 10-12 minutes until soft. Melt the butter in a saucepan, then sauté the flour for 1 minute, stirring constantly. Remove from the heat, stir in the stock and milk, and return to the heat. Bring everything to a boil, stir, and add 50 g of cheese. Season the sauce with salt and pepper. Place the cauliflower, broccoli, and onion on the dough base. Pour the sauce over the top and sprinkle with cheese. Return to the oven for another 10 minutes, until the cheese bubbles. Sprinkle with paprika.
