Cauliflower Cheese Soup

Ingredients for 4 servings:

  • 1 small cauliflower
  • 1 pack of cream cheese spread
  • 500 ml milk
  • 3 tbsp butter
  • 3 tbsp flour
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Divide the cauliflower into florets and cook in 500 ml of salted water for 15 minutes until tender. Then place it in a sieve and drain, reserving the liquid. Sauté the butter and flour in a saucepan, stirring occasionally. Pour in the milk and 250 ml of the cauliflower liquid. Simmer gently for about 10 minutes, then melt the cheese and season with salt, pepper, and nutmeg. Finally, add the cauliflower florets to the soup and heat through.
