Cauliflower Gratin

The perfect cauliflower gratin recipe with a picture and simple step-by-step instructions.

  • 1 smaller Cauliflower fresh
  • Salt
  • 0,5 bunch Chives fresh
  • 1 small Red chilli pepper
  • 30 g Finely grated mountain cheese
  • 250 ml Whipped cream 10% fat
  • Nutmeg
  1. Clean, wash and drain the cauliflower. Place the whole head in a saucepan with a sieve insert. Cover and steam over boiling salted water for about 8-10 minutes. Take out, quench and drain.
  2. Cut the chives into fine rolls. Cut the chilli pepper into rings and remove the core. Finely grate the mountain cheese.
  3. In a saucepan, reduce the cream by half. Season lightly with salt and nutmeg. Place the cauliflower in a baking dish, pour the cream over it, sprinkle with chilli and mountain cheese.
  4. Gratinate in the preheated oven at 220 degrees on the 2nd rack from the bottom for about 10-15 minutes (convection at 200 degrees). Take out of the oven and serve sprinkled with chives.
