Cauliflower Pasta

The perfect cauliflower pasta recipe with a picture and simple step-by-step instructions.

  • 1 smaller Cauliflower fresh
  • 2 tbsp Olive oil
  • 1 bunch Parsley
  • 1 Peeled garlic clove
  • 20 g Freshly grated Parmesan
  • 20 g Chopped almonds
  • 5 tbsp Olive oil
  • Salt and pepper
  • 200 g Pasta penne
  • Salt
  • 1 Splash Lemon juice
  1. Preheat the oven to 200 degrees (circulating air 200 degrees). Clean the cauliflower and cut into 3 cm florets. Mix the cauliflower florets with 2 tablespoons of olive oil on a baking sheet and lightly salt. Cook in the hot oven on the middle rack for 30 minutes, turning occasionally.
  2. Put the parsley leaves, 1 clove of garlic, 20 grams of grated, 20 grams of chopped almonds and 5 tablespoons of olive oil in a blender and season with salt and pepper, then chop finely.
  3. Salt the boiling water and cook the pasta (e.g. penne) in it according to the instructions on the package. Drain the pasta and put it back in the pan. Stir in the pesto and season with a splash of lemon juice and salt. Mix in the cauliflower and serve immediately.
