- 300 g Mixed minced meat
- 1 Chopped onion
- 1 Chopped tomato
- 1 small Diced zucchini
- 1 shot Extra virgin olive oil
- Salt pepper
- 200 g Mixed vegetables
- 1 Cup Vegetable broth
- 300 g Cooked spirelli
- Left from the previous day
- Heat the oil in a pan, sear the onions, season the minced meat with salt & pepper and fry well, then add the tomato pieces and the zucchini cubes and toss them a few times …
- 2 …. put the mixed vegetables in a saucepan, add a little vegetable stock and simmer gently for about 6 minutes, the water should be almost boiled …
- 3 …. now add the minced mixture to the mixed vegetables, swirling again a few times …
- 4 …. now add the spirellis, toss a few times until the noodles are hot, maybe a little more seasoning …. DONE 😉
- For this I had made us a cauliflower, cooked in vegetable broth – some of it was left over that I then fried in butter the next day …
