Ingredients for 6 servings:

  • 1 tbsp oil
  • 1 onion(s), red, finely diced
  • 400g basmati
  • 1 tbsp red curry paste
  • 750 ml vegetable stock
  • 1 cauliflower, cut into florets
  • 50 g almonds (almond slivers), roasted without fat
  • 20 g chopped coriander leaves

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté the onion in oil. Add the rice and curry paste and mix well to coat the rice grains. Add the vegetable stock and cauliflower. Bring to a boil, cover, and cook for 13-15 minutes, until the rice is tender and the liquid is absorbed. Stir in the almonds and coriander.
