Cauliflower pizza

Ingredients for 2 servings:

  • 1 cauliflower
  • 2 tsp egg substitute
  • 1 can of tomatoes in pieces
  • 1 red bell pepper(s)
  • 1 bell pepper(s), yellow
  • 1 garlic clove(s)
  • 100 g asparagus, green
  • 1 carrot(s)
  • 15 g cashew butter
  • e.g. marjoram
  • e.g. basil
  • n. B. Thyme
  • e.g. oregano

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Puree the cauliflower until very finely chopped. Then transfer the mixture to a bowl and microwave for 8 minutes at 800 watts. Mix the cauliflower with the egg substitute, place it on a greased baking sheet, and press down firmly. Bake the base, uncovered, in the oven at 200°C for 10 minutes. Finely chop the bell pepper, asparagus, carrot, and garlic. Distribute the tomato pieces and plenty of herbs over the pre-baked cauliflower base. Add the chopped vegetables and finally the cashew butter, and bake for another 12 minutes.
