Ingredients for 4 servings:
- 400 g cauliflower
- 1 egg(s)
- 2 pts. puff pastry, from the refrigerated section
- 2 tbsp cream cheese
- 3 tbsp processed cheese
- 1 handful of ham cubes
- Cheese, sliced or grated, for gratinating
- some salt and pepper
- some paprika powder
- some nutmeg

Clean the cauliflower and boil it in salted water until soft. Drain the water well and mash the florets with a masher or fork. Add the cream cheese, processed cheese, egg, and diced ham, season with salt, pepper, and nutmeg, and mix well. Now roll out the puff pastry sheets and cut each sheet once lengthwise and twice widthwise into 6 equal-sized squares. Place 1 tablespoon of the cauliflower mixture in the center of all 12 squares, then divide the rest evenly between them. Fold two opposite corners of the squares together and press the edges together to form a triangular pocket. Bake at 180°C for 20-25 minutes. 5-10 minutes before the end of the baking time, top the pockets with cheese and sprinkle with paprika. Let the pockets cool slightly before serving, as the filling will be very hot. This recipe also works with broccoli or mushrooms. Don’t boil the mushrooms; fry them gently in a pan and puree them instead of mashing them. Serve with roasted chicken breast and a light sauce, for example. In smaller portions, it’s also suitable as a party snack.
