Cauliflower rice with mushrooms

Ingredients for 2 servings:

  • 1 head of cauliflower
  • 250 g mushrooms
  • some coconut oil
  • Gouda, optional
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Coarsely grate the raw cauliflower with a cheese grater or chop it with a blender. Clean and slice the mushrooms. Add a dab of coconut oil to each pan and fry the mushrooms until golden brown. Separately, do the same with the cauliflower rice. You can also add a handful of Gouda or other grated cheese to the cauliflower, but this will obviously make the dish less vegan. Season both with salt and pepper and serve sprinkled with parsley.
