Homemade fries

Ingredients for 4 servings:

  • 2 kg potatoes, waxy or mostly waxy
  • 4 tbsp vinegar
  • Salt
  • Paprika powder
  • frying fat

Instructions

Working time approx. 45 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes

Peel the potatoes and cut into 0.5-1 cm sticks. Place the potato sticks in a pot of water, add vinegar, and bring to a boil. Boil for about 5 minutes. Rinse the sticks under running water and drain in a colander. Place a towel on a baking sheet and arrange the fries on it. Pat everything dry with the overlapping half, gently rubbing. Let cool. Set the deep fryer to 150°C. Add the fries in batches (not too many) to the deep fryer and fry for 4 minutes. Remove and place on a baking sheet lined with kitchen paper. Pre-fry all the fries. Set the deep fryer to 180°C and fry all the fries in batches for 8 minutes each. Place in a bowl and season with salt and paprika. I made these fries in kindergarten during a project week.
