Ingredients for 4 servings:

  • 2 cauliflowers
  • 5 tbsp mayonnaise (low-fat)
  • 1 small cup of natural yogurt
  • 1 tsp mustard, medium hot
  • 50 ml milk, low-fat (15%)
  • 5 slice(s) ham, cooked
  • 4 tbsp cheese, grated
  • nutmeg
  • Salt
  • pepper
  • curry powder
  • Paprika powder
  • Cayenne pepper
  • possibly turmeric

Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

Cook the cauliflower until al dente (boil or steam). Divide into florets and let cool. Combine the mayonnaise, yogurt, and mustard. Stir in the milk until creamy. Season with nutmeg (not too much), salt, pepper, curry powder, paprika, and a touch of cayenne pepper (or a little turmeric for color). Cut the ham into small cubes and add to the sauce mixture. Add the cheese to the sauce. Fold in the cauliflower florets and let it sit in the refrigerator or a cool place for a few hours.
