Cauliflower soup

Ingredients for 4 servings:

  • 1 large cauliflower
  • 2 onions
  • 1 tbsp butter
  • 2 tsp curry
  • 1 ¼ liters vegetable broth
  • 100 ml cream
  • 100 g cream cheese spread
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Wash and trim the cauliflower, and divide it into florets. Peel and chop the onions, then sauté them in butter. Add the curry and sauté briefly. Add the cauliflower, pour in the vegetable stock and cream, and simmer for about 20 minutes. Add the cream cheese, season with pepper, nutmeg, and a little salt, if desired. Puree thoroughly.
