Cauliflower spread

Ingredients for 1 servings:

  • 1 cauliflower
  • 1 small onion(s)
  • 1 egg yolk
  • 1 tsp mustard
  • salt and pepper
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the cauliflower in salted water until very soft. Finely dice the onion. Finely chop the cooked cauliflower and add the onions. Whisk the egg yolk with the mustard until smooth, gradually adding enough oil while whisking until a creamy mayonnaise forms. Mix the mayonnaise thoroughly with the cauliflower and season to taste with salt and pepper. Enjoy warm or cold on fresh white bread.
