Ingredients for 4 servings:
- 1 kg cauliflower, cut into florets
- 25 g butter and some butter for greasing
- 2 eggs
- 2 tbsp breadcrumbs
- 150 g cooked ham, diced
- 4 tbsp Parmesan, freshly grated
- salt and pepper
- Fat for the mold
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
Place the cauliflower in a saucepan with cold water and salt, bring to a boil, and simmer for 20 minutes. Drain and place in a bowl. Preheat the oven to 180°C (top/bottom heat). Grease a baking dish. Hard-boil the eggs, rinse under cold water, peel, and halve lengthwise. Remove and mash the yolks. Chop the egg whites. Add the egg whites and yolks to the cauliflower. Heat half the butter in a saucepan and brown the breadcrumbs, stirring frequently. Sprinkle the breadcrumbs over the cauliflower, sprinkle with ham and Parmesan cheese, season with salt and pepper, and mix gently. Transfer everything to the dish and scatter the remaining butter on top. Bake in the hot oven for 20 minutes. Serve with fresh ciabatta.
