Celery salad with orange juice

Ingredients for 6 servings:

  • 1 kg celeriac
  • 300 g carrot(s)
  • 300 g potatoes
  • 300 g onion(s)
  • 2 garlic cloves
  • 2 orange(s), juice and zest
  • 20 g olive oil
  • 50 g balsamic vinegar, white (or light) vinegar
  • salt and pepper
  • Sugar
  • lemon juice
  • ½ bunch chives

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cut the celery, carrots, and potatoes into small cubes and add them to the water with lemon juice to prevent the vegetables from discoloring. Finely chop the onions and garlic and sauté in the hot oil. Drain the vegetables and add them to the salad. Squeeze the oranges and pour the juice over the vegetables. If desired, you can also grate some orange zest and add it. Add a little more of the lemon water, if desired. Season with salt and pepper, bring to a boil, and simmer in the pan for about 10 minutes until the liquid has absorbed a little. Season with balsamic vinegar and a little sugar, add the chopped chives, stir, transfer to a salad bowl, and allow to cool. Serve as a salad. Can also be served warm on green baby lettuce, lamb’s lettuce, or butterhead lettuce.
